Ingredients
- Mini potatoes: 1 pound
- Olive oil: 1 tablespoon
- Taco seasoning: 2 tablespoons
- Bell peppers: 1, chopped
- Onion: 1, chopped
- Black beans: 1 (15-ounce) can, rinsed and drained
- Corn: 1 cup
- Salsa: To taste
- Avocado: For topping
- Greek yogurt or sour cream: For topping
- Cilantro: For garnish
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil and taco seasoning.
- Roast potatoes for 20 minutes.
- Add bell peppers and onion; roast for 15 more minutes.
- Combine potatoes, vegetables, black beans, and corn.
- Serve in bowls with salsa, avocado, Greek yogurt/sour cream, and cilantro.
