Ingredients

  • Chicken breast: 1.5 lbs
  • Diced tomatoes: 1 (14.5 ounce) can
  • Black beans: 1 (15 ounce) can, rinsed and drained
  • Corn: 1 (15 ounce) can, drained
  • Onion: 1, chopped
  • Bell pepper: 1, chopped
  • Taco seasoning: 1 packet
  • Chicken broth: 1 cup


Instructions

  1. Place chicken breasts in the crockpot.
  2. Add diced tomatoes, black beans, corn, onion, and bell pepper.
  3. Sprinkle with taco seasoning.
  4. Pour in chicken broth.
  5. Cook on low for 6-8 hours or high for 3-4 hours.
  6. Shred chicken with two forks.
  7. Serve and enjoy!
