Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup brown rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup frozen peas
  • 1 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with salt and pepper.
  3. Heat olive oil in a skillet. Sear chicken until lightly browned.
  4. In a baking dish, combine rice, broth, onion, carrots, and celery.
  5. Place chicken on top of the rice mixture.
  6. Cover and bake for 30 minutes.
  7. Remove cover, add peas, and bake for another 15 minutes, or until chicken is cooked through and rice is tender.
