Ingredients

- 1.5 lbs boneless, skinless chicken breasts
- 1 cup brown rice
- 2 cups chicken broth
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup frozen peas
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken with salt and pepper.
- Heat olive oil in a skillet. Sear chicken until lightly browned.
- In a baking dish, combine rice, broth, onion, carrots, and celery.
- Place chicken on top of the rice mixture.
- Cover and bake for 30 minutes.
- Remove cover, add peas, and bake for another 15 minutes, or until chicken is cooked through and rice is tender.
Notes
- You can add other vegetables like bell peppers or mushrooms.
- For extra flavor, use herbs like thyme or rosemary.
- Ensure chicken reaches an internal temperature of 165°F (74°C).
