A delicious and easy ground beef enchilada casserole, perfect for feeding a crowd.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 1 packet taco seasoning
- 1 cup water
- 10-12 corn tortillas
- 2 cups enchilada sauce
- 2 cups shredded cheddar cheese
- Optional toppings: sour cream, salsa, chopped cilantro
Instructions
- Brown ground beef and onion in a skillet. Drain any grease.
- Add taco seasoning and water. Simmer for 5 minutes.
- Preheat oven to 375°F (190°C).
- Dip tortillas in enchilada sauce.
- Layer tortillas, beef mixture, and cheese in a baking dish. Repeat layers.
- Top with remaining enchilada sauce and cheese.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
- Let stand for a few minutes before serving.
- Add your favorite toppings.
Notes
- You can use a different type of cheese.
- Add beans or corn to the beef mixture for extra flavor.
- Make it ahead of time and refrigerate before baking.
