Ingredients
- Pasta (e.g., rotini): 8 ounces
- Cooked chicken, diced: 2 cups
- Cherry tomatoes, halved: 1 pint
- Cucumber, diced: 1 medium
- Red onion, thinly sliced: 1/2 medium
- Kalamata olives, pitted and halved: 1/2 cup
- Feta cheese, crumbled: 1/2 cup
- Fresh parsley, chopped: 1/4 cup
- Fresh oregano, chopped: 2 tablespoons
- Lemon juice: 1/4 cup
- Olive oil: 1/4 cup
- Garlic, minced: 2 cloves
- Salt: To taste
- Black pepper: To taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine cooked pasta, chicken, tomatoes, cucumber, red onion, and olives.
- In a small bowl, whisk together lemon juice, olive oil, garlic, salt, and pepper.
- Pour dressing over the pasta salad and toss to combine.
- Gently fold in feta cheese, parsley, and oregano.
- Chill for at least 30 minutes before serving.
