Ingredients
- Chicken breast: 1 pound
- Assorted vegetables (bell peppers, zucchini, red onion): 3 cups, chopped
- Cherry tomatoes: 1 cup
- Olive oil: 3 tablespoons
- Greek seasoning: 2 tablespoons
- Lemon juice: 2 tablespoons
- Cooked quinoa or rice: 2 cups
- Feta cheese: 1/2 cup, crumbled
- Kalamata olives: 1/4 cup, sliced
Instructions
- Preheat your oven to 400°F (200°C).
- Toss vegetables with olive oil and Greek seasoning.
- Roast vegetables for 20 minutes.
- Season chicken with Greek seasoning.
- Add chicken to the baking sheet with vegetables and roast for 20-25 minutes, or until cooked.
- Drizzle lemon juice over vegetables and chicken.
- Assemble bowls with quinoa/rice, vegetables, chicken, feta, and olives.
