Ingredients

  • Chicken breast: 1 pound
  • Assorted vegetables (bell peppers, zucchini, red onion): 3 cups, chopped
  • Cherry tomatoes: 1 cup
  • Olive oil: 3 tablespoons
  • Greek seasoning: 2 tablespoons
  • Lemon juice: 2 tablespoons
  • Cooked quinoa or rice: 2 cups
  • Feta cheese: 1/2 cup, crumbled
  • Kalamata olives: 1/4 cup, sliced


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss vegetables with olive oil and Greek seasoning.
