Ingredients
- Chicken breasts (2)
- Olive oil (2 tbsp)
- Lemon juice (2 tbsp)
- Dried oregano (1 tsp)
- Salt (to taste)
- Black pepper (to taste)
- Cooked quinoa (1 cup)
- Cucumber (1, chopped)
- Cherry tomatoes (1 cup, halved)
- Red onion (1/4, thinly sliced)
- Kalamata olives (1/4 cup)
- Feta cheese (1/4 cup, crumbled)
- Greek yogurt (for serving)
Instructions
- Marinate chicken: Combine olive oil, lemon juice, oregano, salt, and pepper. Marinate chicken for at least 30 minutes.
- Cook chicken: Grill, bake, or pan-fry chicken until cooked through.
- Assemble bowl: Place quinoa in a bowl. Top with chicken, cucumber, tomatoes, red onion, olives, and feta.
- Serve: Drizzle with Greek yogurt.
Notes
- You can add other vegetables like bell peppers.
- Feel free to use pre-cooked chicken for ease.
