Ingredients
- Chicken Breast (2)
- Olive Oil (2 tbsp)
- Lemon Juice (1 tbsp)
- Dried Oregano (1 tsp)
- Salt (to taste)
- Black Pepper (to taste)
- Cucumber (1, diced)
- Cherry Tomatoes (1 cup, halved)
- Red Onion (1/4, thinly sliced)
- Kalamata Olives (1/4 cup)
- Feta Cheese (1/4 cup, crumbled)
- Cooked Quinoa or Rice (1 cup)
- Hummus (2 tbsp)
Instructions
- Marinate chicken: Combine olive oil, lemon juice, oregano, salt, and pepper. Marinate chicken for 30 minutes.
- Cook chicken: Grill, bake, or pan-fry chicken until cooked through.
- Prepare vegetables: Dice cucumber, halve tomatoes, and slice red onion.
- Assemble the bowl: Place quinoa or rice in a bowl. Top with chicken, vegetables, olives, and feta.
- Add hummus: Drizzle with hummus.
