Description

This is a classic potato salad recipe, just like Grandma used to make.


Ingredients

  • Potatoes: 3 pounds, peeled and cubed
  • Eggs: 6, hard-boiled and chopped
  • Celery: 1 cup, chopped
  • Onion: 1/2 cup, chopped
  • Sweet pickle relish: 1/2 cup
  • Mayonnaise: 1 cup
  • Yellow mustard: 2 tablespoons
  • Salt: to taste
  • Black pepper: to taste


Instructions

  1. Boil potatoes until tender. Drain and let cool.
  2. Hard boil eggs. Chop.
  3. Combine potatoes, eggs, celery, onion, and relish.
  4. In a separate bowl, whisk together mayonnaise and mustard.
  5. Pour dressing over potato mixture and stir gently.
  6. Season with salt and pepper.
  7. Chill for at least 30 minutes before serving.

Notes

  • For best results, use Yukon Gold potatoes.
  • Adjust the amount of mayonnaise to your liking.
  • Add a pinch of paprika for color.
  • You can add a tablespoon of apple cider vinegar for a tangier flavor.
