Description
This is a classic potato salad recipe, just like Grandma used to make.
Ingredients
- Potatoes: 3 pounds, peeled and cubed
- Eggs: 6, hard-boiled and chopped
- Celery: 1 cup, chopped
- Onion: 1/2 cup, chopped
- Sweet pickle relish: 1/2 cup
- Mayonnaise: 1 cup
- Yellow mustard: 2 tablespoons
- Salt: to taste
- Black pepper: to taste
Instructions
- Boil potatoes until tender. Drain and let cool.
- Hard boil eggs. Chop.
- Combine potatoes, eggs, celery, onion, and relish.
- In a separate bowl, whisk together mayonnaise and mustard.
- Pour dressing over potato mixture and stir gently.
- Season with salt and pepper.
- Chill for at least 30 minutes before serving.
Notes
- For best results, use Yukon Gold potatoes.
- Adjust the amount of mayonnaise to your liking.
- Add a pinch of paprika for color.
- You can add a tablespoon of apple cider vinegar for a tangier flavor.
