Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup packed light brown sugar
  • 1 large egg
  • 1 cup molasses
  • 1 cup boiling water
  • Powdered sugar, for dusting (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a separate bowl, cream together the butter and brown sugar until light and fluffy.
  4. Beat in the egg.
  5. Stir in the molasses.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Carefully pour in the boiling water and mix until the batter is smooth.
  8. Pour the batter into the prepared pan.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool completely in the pan before dusting with powdered sugar, if desired.

Notes

  • For a spicier cake, add more ginger or a pinch of cayenne pepper.
  • You can add chocolate chips or chopped nuts to the batter.
