- 1 (3-4 pound) prime rib roast
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
Instructions
- Preheat your oven to 450°F (230°C).
- Pat the prime rib dry with paper towels.
- In a small bowl, mix together minced garlic, chopped rosemary, and olive oil.
- Rub the garlic and rosemary mixture all over the prime rib.
- Season generously with salt and pepper.
- Place the roast in a roasting pan, fat side up.
- Sear the roast in the preheated oven for 15 minutes.
- Reduce the oven temperature to 325°F (160°C).
- Continue roasting for about 12-15 minutes per pound, or until an instant-read thermometer inserted into the thickest part registers 120-125°F (49-52°C) for rare, 130-135°F (54-57°C) for medium-rare.
- Remove the roast from the oven and let it rest, tented with foil, for 15-20 minutes before carving.
Notes
- For a more intense garlic flavor, you can insert slivers of garlic into the roast.
