- 2 lbs boneless, skinless chicken thighs
- 1.5 lbs baby potatoes, halved
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cloves garlic, minced
- 1/4 cup chopped fresh parsley, for garnish
Instructions
- Place chicken thighs in the bottom of your slow cooker.
- Add the halved baby potatoes around the chicken.
- In a small bowl, whisk together chicken broth, olive oil, Italian seasoning, salt, pepper, and minced garlic.
- Pour the mixture over the chicken and potatoes.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and potatoes are tender.
- Stir in the grated Parmesan cheese during the last 15 minutes of cooking.
- Garnish with fresh parsley before serving.
Notes
- You can use chicken breasts instead of thighs, but adjust cooking time as they can dry out more easily.
- Feel free to add other vegetables like carrots or broccoli in the last hour of cooking.
- For a crispier potato texture, you can broil them for a few minutes after removing from the slow cooker.
