Description

A simple and delicious recipe for Garlic Parmesan Crockpot Chicken and Potatoes, perfect for a weeknight meal.


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1.5 lbs baby potatoes, halved
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1/4 cup chopped fresh parsley, for garnish


Instructions

  1. Place chicken thighs in the bottom of your slow cooker.
  2. Add the halved baby potatoes around the chicken.
  3. In a small bowl, whisk together chicken broth, olive oil, Italian seasoning, salt, pepper, and minced garlic.
  4. Pour the mixture over the chicken and potatoes.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and potatoes are tender.
  6. Stir in the grated Parmesan cheese during the last 15 minutes of cooking.
  7. Garnish with fresh parsley before serving.

Notes

  • You can use chicken breasts instead of thighs, but adjust cooking time as they can dry out more easily.
  • Feel free to add other vegetables like carrots or broccoli in the last hour of cooking.
  • For a crispier potato texture, you can broil them for a few minutes after removing from the slow cooker.
