Description

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1.5 lbs baby potatoes, halved or quartered if large
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken pieces and potatoes with olive oil, minced garlic, Italian seasoning, salt, and pepper until evenly coated.
  3. Spread the chicken and potatoes in a single layer on a large baking sheet.
  4. Roast for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender and golden brown, flipping halfway through.
  5. Remove from the oven and sprinkle generously with grated Parmesan cheese.
  6. Return to the oven for 2-3 minutes, until the cheese is melted and slightly bubbly.
  7. Garnish with fresh parsley before serving.
