- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1.5 lbs baby potatoes, halved or quartered if large
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the chicken pieces and potatoes with olive oil, minced garlic, Italian seasoning, salt, and pepper until evenly coated.
- Spread the chicken and potatoes in a single layer on a large baking sheet.
- Roast for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender and golden brown, flipping halfway through.
- Remove from the oven and sprinkle generously with grated Parmesan cheese.
- Return to the oven for 2-3 minutes, until the cheese is melted and slightly bubbly.
- Garnish with fresh parsley before serving.
Notes
- For crispier potatoes, you can roast them for 15-20 minutes first before adding the chicken.

- Any leftover chicken and potatoes can be stored in an airtight container in the refrigerator for up to 3 days.
