- 2 large sweet potatoes, peeled and cubed

Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, garlic, herbs, salt, and pepper.
- Spread potatoes in a single layer on a baking sheet.
- Roast for 25-30 minutes, or until tender and slightly browned.
- Serve hot.
