Quick and easy garlic butter shrimp with vegetables.
Ingredients

- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup mixed vegetables (broccoli, bell peppers, etc.)
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Add shrimp and cook until pink, about 2-3 minutes per side. Remove from skillet.
- Add garlic and vegetables to the skillet. Cook until vegetables are tender-crisp, about 3-5 minutes.
- Add butter to the skillet and let it melt.
- Return shrimp to the skillet. Season with salt and pepper.
- Toss to combine.
- Garnish with fresh parsley.
