Description

Quick and easy garlic butter shrimp with vegetables.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (broccoli, bell peppers, etc.)
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add shrimp and cook until pink, about 2-3 minutes per side. Remove from skillet.
  3. Add garlic and vegetables to the skillet. Cook until vegetables are tender-crisp, about 3-5 minutes.
  4. Add butter to the skillet and let it melt.
  5. Return shrimp to the skillet. Season with salt and pepper.
  6. Toss to combine.
  7. Garnish with fresh parsley.
