Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain rice, uncooked
  • 2 cups chicken broth
  • 1 cup milk or cream
  • 1/2 cup frozen peas
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish, optional)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken with salt and pepper.
  3. Cook chicken until browned. Remove from skillet.
  4. Add onion to the skillet and cook until softened.
  5. Stir in garlic. Cook for 30 seconds.
  6. Add rice and cook for 1 minute, stirring.
  7. Pour in chicken broth. Bring to a boil.
  8. Reduce heat, cover, and simmer for 15 minutes.
  9. Stir in milk or cream and peas.
  10. Return chicken to skillet.
  11. Cook until chicken is cooked through and rice is tender, about 5-7 minutes.
  12. Stir in Parmesan cheese (if using).
  13. Garnish with parsley (optional).

Notes

  • You can substitute chicken thighs for chicken breasts.
  • Add other vegetables like carrots or mushrooms.
