A comforting and easy Creamy Chicken and Rice Skillet Dinner.
Ingredients

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice, uncooked
- 2 cups chicken broth
- 1 cup milk or cream
- 1/2 cup frozen peas
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley, chopped (for garnish, optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with salt and pepper.
- Cook chicken until browned. Remove from skillet.
- Add onion to the skillet and cook until softened.
- Stir in garlic. Cook for 30 seconds.
- Add rice and cook for 1 minute, stirring.
- Pour in chicken broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Stir in milk or cream and peas.
- Return chicken to skillet.
- Cook until chicken is cooked through and rice is tender, about 5-7 minutes.
- Stir in Parmesan cheese (if using).
- Garnish with parsley (optional).
Notes
- You can substitute chicken thighs for chicken breasts.
- Add other vegetables like carrots or mushrooms.
- Adjust the amount of liquid for desired creaminess.
