- 1 pound elbow macaroni
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 4 cups milk
- 4 cups shredded cheddar cheese
- 1 cup buffalo wing sauce
- 2 cups cooked chicken, shredded
- 1/2 cup crumbled blue cheese (optional)
- Salt and pepper to taste
Instructions
- Cook the macaroni according to package directions. Drain and set aside.
- In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
- Reduce heat and stir in cheddar cheese until melted.
- Stir in buffalo wing sauce, cooked chicken, and salt and pepper.
- Add the cooked macaroni and stir to combine.
- Pour mac and cheese into a baking dish.
- Top with blue cheese (optional).
- Bake at 350°F (175°C) for 20 minutes, or until heated through and bubbly.
