Description

A refreshing and flavorful pasta salad perfect for summer gatherings.


Ingredients

Scale
  • 1 pound orzo pasta
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 4 ounces feta cheese, crumbled


Instructions

  1. Cook orzo pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper.
  3. Add the cooked orzo, cherry tomatoes, cucumber, red onion, olives, basil, and parsley to the bowl.
  4. Toss to combine.
  5. Gently fold in the feta cheese.
  6. Serve chilled.
