Description

A comforting and flavorful one-pot casserole featuring tender chicken, sweet caramelized onions, and orzo pasta in a rich, creamy sauce, topped with melted cheese. Perfect for a cozy weeknight meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 large yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup dry white wine (optional)
  • 3 cups chicken broth
  • 1 cup orzo pasta
  • 1/2 cup heavy cream
  • 1/2 cup shredded Gruyère cheese
  • 1/4 cup shredded Parmesan cheese
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides. Remove chicken from skillet and set aside.
  2. Add sliced onion to the skillet and cook, stirring occasionally, until softened and lightly caramelized, about 8-10 minutes.
  3. Add minced garlic, thyme, salt, and pepper to the skillet. Cook for 1 minute until fragrant.
  4. Pour in white wine (if using) and scrape up any browned bits from the bottom of the skillet. Let it simmer for 1-2 minutes until slightly reduced.
  5. Add chicken broth and bring to a simmer. Stir in the orzo pasta.
  6. Return the browned chicken to the skillet.
  7. Reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is al dente and most of the liquid is absorbed.
  8. Stir in the heavy cream.
  9. Preheat your broiler.
  10. Top the casserole evenly with Gruyère and Parmesan cheeses.
  11. Broil for 2-3 minutes, or until the cheese is melted and bubbly and lightly golden.
  12. Garnish with fresh parsley before serving.

Notes

  • For a deeper onion flavor, caramelize the onions for a longer period, up to 20 minutes.
  • If you don’t have white wine, you can skip it or use an additional 1/2 cup of chicken broth.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the oven.
