- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 large yellow onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup dry white wine (optional)
- 3 cups chicken broth
- 1 cup orzo pasta
- 1/2 cup heavy cream
- 1/2 cup shredded Gruyère cheese
- 1/4 cup shredded Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add sliced onion to the skillet and cook, stirring occasionally, until softened and lightly caramelized, about 8-10 minutes.
- Add minced garlic, thyme, salt, and pepper to the skillet. Cook for 1 minute until fragrant.
- Pour in white wine (if using) and scrape up any browned bits from the bottom of the skillet. Let it simmer for 1-2 minutes until slightly reduced.
- Add chicken broth and bring to a simmer. Stir in the orzo pasta.
- Return the browned chicken to the skillet.
- Reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is al dente and most of the liquid is absorbed.
- Stir in the heavy cream.
- Preheat your broiler.
- Top the casserole evenly with Gruyère and Parmesan cheeses.
- Broil for 2-3 minutes, or until the cheese is melted and bubbly and lightly golden.
- Garnish with fresh parsley before serving.
Notes
- For a deeper onion flavor, caramelize the onions for a longer period, up to 20 minutes.
- If you don’t have white wine, you can skip it or use an additional 1/2 cup of chicken broth.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the oven.
