Ingredients

Scale
  • 1 cup warm milk (105-115F)
  • 2 and 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1/3 cup butter, melted
  • 1 teaspoon salt
  • 1 large egg
  • 3 and 1/2 cups all-purpose flour, plus more for dusting
  • For the Filling:
  • 1/2 cup packed light brown sugar
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup (1 stick) unsalted butter, softened
  • For the Frosting:
  • 8 ounces cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk

Instructions

  1. In a large bowl, combine warm milk, yeast, and a pinch of sugar. Let sit for 5-10 minutes until foamy.
  2. Stir in the remaining sugar, melted butter, salt, and egg.
  3. Gradually add flour, mixing until a soft dough forms.
  4. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Punch down the dough and roll it out into a large rectangle (about 12×18 inches) on a floured surface.
  7. In a small bowl, mix together brown sugar, cinnamon, nutmeg, and cloves for the filling.
  8. Spread softened butter evenly over the dough, leaving a small border.
  9. Sprinkle the brown sugar mixture over the butter.
  10. Starting from the long edge, tightly roll up the dough.
  11. Cut the roll into 12 equal slices.
  12. Place slices cut-side up in a greased baking dish.
  13. Cover and let rise for another 30-45 minutes.
  14. Preheat oven to 375F (190C).
  15. Bake for 20-25 minutes, or until golden brown.
  16. While rolls bake, prepare the frosting: Beat cream cheese and butter until smooth.
  17. Gradually add powdered sugar and vanilla extract, beating until combined.
  18. Add milk one tablespoon at a time until desired consistency is reached.
  19. Spread frosting over warm rolls.

Notes

  • Ensure your milk is warm, not hot, to avoid killing the yeast.
  • For a stronger pumpkin flavor, you can add 1/4 cup of pumpkin puree to the dough.
  • You can substitute other warm spices like ginger or allspice in the filling.
