Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Heat olive oil in an oven-safe skillet over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add your chosen vegetables and cook until tender, about 5-7 minutes.
- If using, stir in cooked meat.
- Pour the egg mixture over the vegetables and meat.
- If using, sprinkle cheese evenly over the top.
- Cook on the stovetop for 2-3 minutes until the edges begin to set.
- Transfer the skillet to the preheated oven.
