Description

A classic Finnish salmon soup, Lohikeitto, is a creamy and flavorful dish. It’s perfect for a comforting meal.


Ingredients

  • 1 lb salmon fillets, skin removed, cut into 1-inch cubes
  • 4 cups vegetable broth
  • 4 medium potatoes, peeled and cubed
  • 2 carrots, peeled and sliced
  • 1 large onion, chopped
  • 1 cup heavy cream
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste
  • 2 tablespoons butter


Instructions

  1. Melt butter in a large pot. Sauté onion and carrots until softened.
  2. Add potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are almost tender.
  3. Gently add salmon cubes. Cook until salmon is cooked through, about 5-7 minutes.
  4. Stir in heavy cream and fresh dill. Heat through, but do not boil.
  5. Season with salt and pepper to taste.
  6. Serve hot.

Notes

  • You can substitute vegetable broth with fish broth for richer flavor.
  • Adjust the amount of dill according to your preference.
  • For a thicker soup, mash some of the potatoes before adding the cream.
