A classic Finnish salmon soup, Lohikeitto, is a creamy and flavorful dish. It’s perfect for a comforting meal.
Ingredients

- 1 lb salmon fillets, skin removed, cut into 1-inch cubes
- 4 cups vegetable broth
- 4 medium potatoes, peeled and cubed
- 2 carrots, peeled and sliced
- 1 large onion, chopped
- 1 cup heavy cream
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
- 2 tablespoons butter
Instructions
- Melt butter in a large pot. Sauté onion and carrots until softened.
- Add potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until potatoes are almost tender.
- Gently add salmon cubes. Cook until salmon is cooked through, about 5-7 minutes.
- Stir in heavy cream and fresh dill. Heat through, but do not boil.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- You can substitute vegetable broth with fish broth for richer flavor.
- Adjust the amount of dill according to your preference.
- For a thicker soup, mash some of the potatoes before adding the cream.
