Description

A delicious fall-flavored loaf with a sweet maple glaze.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 3 large eggs
  • 3/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 1/2 cup chopped walnuts (optional)
  • For the Glaze: 1 cup powdered sugar
  • 2-3 tablespoons maple syrup


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. Whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, cream together sugars, eggs, oil, and vanilla.
  4. Stir in pumpkin puree.
  5. Gradually add dry ingredients to wet ingredients.
  6. Fold in walnuts, if using.
  7. Pour batter into prepared pan.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Let cool in pan for 10 minutes before inverting onto a wire rack.
  10. For the glaze: Whisk together powdered sugar and maple syrup. Add more syrup for desired consistency.
  11. Drizzle glaze over cooled loaf.
