Ingredients

- 1 lb sweet potatoes, peeled and cubed
- 1/4 cup olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup chopped pecans
- 1/4 cup maple syrup
- 1 lb green beans, trimmed
- 2 cloves garlic, minced
- 2 tbsp butter
- 1/4 cup sliced almonds
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes with olive oil, salt, and pepper. Roast for 20 minutes.
- Add pecans and maple syrup. Roast for another 10 minutes.
- Steam green beans until tender-crisp.
- Sauté garlic in butter.
- Toss green beans with garlic butter and almonds.
