- 8 oz dried noodles
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1-2 jalapeños, seeded and minced (adjust to your spice preference)
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 4 cups vegetable broth
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat olive oil in a large pan over medium heat.
- Add onion and cook until softened.
- Add garlic, bell pepper, and jalapeños; cook for 2-3 minutes.
- Stir in chili powder and cumin.
- Add potatoes and noodles.
- Pour in vegetable broth, season with salt and pepper.
- Bring to a boil, then reduce heat and simmer until noodles and potatoes are tender (about 10-15 minutes).
- Garnish with fresh cilantro.
Notes
- Adjust the amount of jalapeños to control the spiciness.
- You can add other vegetables like carrots or zucchini.
