- 1 pound shrimp, peeled and deveined
- 1 cup rice
- 2 cups water or broth
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Optional: vegetables like bell peppers or broccoli
Instructions
- Rinse the rice.
- Sauté onion and garlic in olive oil.
- Add shrimp and cook until pink.
- Add rice and water/broth.
- Bring to a boil, then simmer until rice is cooked.
- Season with salt and pepper.
- Add vegetables during the last few minutes, if using.

- Serve with a side salad.
