Description

A simple make-ahead breakfast casserole with sausage and hashbrowns.


Ingredients

Scale
  • 1 pound sausage
  • 1 (30 ounce) package frozen shredded hash brown potatoes
  • 1 medium onion, chopped
  • 8 large eggs
  • 1 1/2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook sausage in a skillet until browned. Drain grease.
  3. In a large bowl, combine hash browns, onion, cooked sausage, eggs, milk, salt, and pepper.
  4. Pour half of the mixture into a greased 9×13 inch baking dish.
  5. Sprinkle with half of the cheese.
  6. Top with remaining hash brown mixture.
  7. Sprinkle with remaining cheese.
  8. Bake for 45-50 minutes, or until set and golden brown.
  9. Let stand for a few minutes before serving.

Notes

  • You can assemble this casserole the night before and bake it in the morning.
  • Feel free to add other vegetables like bell peppers.
  • For a spicier casserole, use hot sausage.
