Description
A simple make-ahead breakfast casserole with sausage and hashbrowns.
Ingredients

- 1 pound sausage
- 1 (30 ounce) package frozen shredded hash brown potatoes
- 1 medium onion, chopped
- 8 large eggs
- 1 1/2 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C).
- Cook sausage in a skillet until browned. Drain grease.
- In a large bowl, combine hash browns, onion, cooked sausage, eggs, milk, salt, and pepper.
- Pour half of the mixture into a greased 9×13 inch baking dish.
- Sprinkle with half of the cheese.
- Top with remaining hash brown mixture.
- Sprinkle with remaining cheese.
- Bake for 45-50 minutes, or until set and golden brown.
- Let stand for a few minutes before serving.
Notes
- You can assemble this casserole the night before and bake it in the morning.
- Feel free to add other vegetables like bell peppers.
- For a spicier casserole, use hot sausage.
