A simple and delicious Mediterranean dinner bowl.
Ingredients

- 1 cup cooked quinoa
- 4 oz grilled beef, sliced
- 1/2 cup chopped cucumber
- 1/4 cup chopped tomatoes
- 1/4 cup Kalamata olives
- 2 tbsp crumbled feta cheese
- 2 tbsp hummus
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Prepare the quinoa according to package directions.
- Grill the beef and slice it.
- In a bowl, combine quinoa, beef, cucumber, tomatoes, olives, and feta cheese.
- Add hummus.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper.
- Serve immediately.
Notes
- You can substitute the beef with chicken or chickpeas.
- Add other vegetables like bell peppers or red onion.
- Adjust the seasoning to your liking.
