Description

Ingredients

  • 1 cup cooked quinoa
  • 4 oz grilled beef, sliced
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped tomatoes
  • 1/4 cup Kalamata olives
  • 2 tbsp crumbled feta cheese
  • 2 tbsp hummus
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste


Instructions

  1. Prepare the quinoa according to package directions.
  2. Grill the beef and slice it.
  3. In a bowl, combine quinoa, beef, cucumber, tomatoes, olives, and feta cheese.
  4. Add hummus.
  5. Drizzle with olive oil and lemon juice.
