Description

A quick and easy corn casserole recipe using Jiffy mix. This creamy cornbread dish is perfect as a side for any meal.


Ingredients

  • 1 box (8.5 oz) Jiffy Corn Muffin Mix
  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) creamed corn
  • 1/2 cup sour cream
  • 1/2 cup butter, melted
  • 2 large eggs


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish.
  3. In a large bowl, combine the Jiffy Corn Muffin Mix, drained whole kernel corn, creamed corn, sour cream, melted butter, and eggs.
  4. Mix until all ingredients are well combined.
  5. Pour the batter into the prepared baking dish.
  6. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  7. Let it cool slightly before serving.

Notes

  • For a sweeter casserole, add 1/4 cup of sugar to the batter.
  • Add shredded cheese for a cheesy corn casserole.
