- 1 box (8.5 oz) Jiffy Corn Muffin Mix
- 1 can (15 oz) whole kernel corn, drained
- 1 can (15 oz) creamed corn
- 1/2 cup sour cream
- 1/2 cup butter, melted
- 2 large eggs
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13 inch baking dish.
- In a large bowl, combine the Jiffy Corn Muffin Mix, drained whole kernel corn, creamed corn, sour cream, melted butter, and eggs.
- Mix until all ingredients are well combined.
- Pour the batter into the prepared baking dish.
- Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
- Let it cool slightly before serving.
Notes
- For a sweeter casserole, add 1/4 cup of sugar to the batter.
- Add shredded cheese for a cheesy corn casserole.
- Serve warm.
