- 1 pound ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 cup chicken broth
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Add the ground turkey to the skillet. Break it up with a spoon and cook until browned. Drain any excess fat.
- Stir in the diced sweet potatoes, salt, pepper, and paprika.
- Pour in the chicken broth.
- Bring the mixture to a simmer, then cover and cook for 15-20 minutes, or until the sweet potatoes are tender.
- Stir in fresh parsley, if using.
- Serve hot.
Notes
- For a spicier dish, add a pinch of red pepper flakes with the other seasonings.
- You can substitute ground chicken or ground beef for the ground turkey.
- Add other vegetables like bell peppers or spinach for extra nutrients.
