Ingredients

  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup chicken broth
  • 1/4 cup chopped fresh parsley (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the chopped onion and cook until softened, about 5 minutes.
  4. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Add the ground turkey to the skillet. Break it up with a spoon and cook until browned. Drain any excess fat.
  6. Stir in the diced sweet potatoes, salt, pepper, and paprika.
  7. Pour in the chicken broth.
  8. Bring the mixture to a simmer, then cover and cook for 15-20 minutes, or until the sweet potatoes are tender.
  9. Stir in fresh parsley, if using.
  10. Serve hot.
