- 1.5 lbs boneless, skinless chicken breasts
- 1 cup uncooked white rice
- 1 head broccoli, cut into florets
- 1 can (10.5 oz) condensed cream of chicken soup
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place chicken breasts in the bottom of your slow cooker.
- In a bowl, mix together uncooked rice, broccoli florets, cream of chicken soup, and chicken broth.
- Pour the rice and broccoli mixture over the chicken.
- Season with salt and pepper.
- Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until chicken is cooked through and rice is tender.
- Remove chicken and shred it with two forks. Return shredded chicken to the slow cooker.
- Stir in shredded cheddar cheese until melted and creamy.
- Serve hot.
Notes
- You can use brown rice, but it may require a longer cooking time.
- Feel free to add other vegetables like carrots or peas.
- For a spicier dish, add a pinch of red pepper flakes.
