Description

A simple and satisfying crockpot meal featuring tender chicken, broccoli, and cheesy rice. Perfect for a weeknight dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup uncooked white rice
  • 1 head broccoli, cut into florets
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Place chicken breasts in the bottom of your slow cooker.
  2. In a bowl, mix together uncooked rice, broccoli florets, cream of chicken soup, and chicken broth.
  3. Pour the rice and broccoli mixture over the chicken.
  4. Season with salt and pepper.
  5. Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until chicken is cooked through and rice is tender.
  6. Remove chicken and shred it with two forks. Return shredded chicken to the slow cooker.
  7. Stir in shredded cheddar cheese until melted and creamy.
  8. Serve hot.

Notes

  • You can use brown rice, but it may require a longer cooking time.
  • Feel free to add other vegetables like carrots or peas.
  • For a spicier dish, add a pinch of red pepper flakes.
