- 1 cup shredded carrots
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme

- 8 oz Velveeta cheese, cubed
- 1/4 cup shredded cheddar cheese (for topping)

- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.

- Ladle the soup into bowls.
- Top with shredded cheddar cheese and your desired optional toppings.
Notes
- You can substitute ground turkey or chicken for ground beef.
- If you prefer a thicker soup, you can mash some of the potatoes against the side of the slow cooker before adding the cheese.
- For a spicier soup, add a pinch of red pepper flakes.
