- 2 pounds boneless, skinless chicken breasts
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 (15-ounce) cans cannellini beans, rinsed and drained
- 1 (4-ounce) can diced green chilies
- 4 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- 1/4 cup chopped fresh cilantro, for garnish
- Shredded cheese, for garnish
- Sour cream, for garnish
Instructions
- Place chicken breasts in the crockpot.
- Add onion, garlic, cannellini beans, and diced green chilies.
- Pour in chicken broth.
- Stir in cumin, oregano, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
- Remove chicken from the crockpot and shred it. Return shredded chicken to the crockpot.
- Stir in heavy cream.
- Serve hot, garnished with cilantro, shredded cheese, and sour cream.
Notes
- For a spicier chili, add a pinch of cayenne pepper.
- If you prefer a thicker chili, you can mash some of the beans against the side of the crockpot.
- This chili can be made ahead of time and reheated.
