It comes together in under 20 minutes and delivers restaurant-quality flavor right from your skillet. Whether served at a holiday feast or alongside a weeknight dinner, this creamy spinach side is always a hit.
Ingredients
- 2 tablespoons unsalted butter
- 1/2 cup chopped onion (optional)
- 2 cloves garlic, minced
- 10 oz fresh spinach (or thawed frozen spinach, well drained)
- 4 oz cream cheese, cubed
- 1/2 cup heavy cream (or half & half)
- Pinch of ground nutmeg
- Salt and black pepper to taste
Instructions
- Sauté the aromatics: In a large skillet, melt butter over medium heat. Add onion (if using) and garlic, and sauté for 2–3 minutes until fragrant.
- Cook the spinach: Add fresh spinach and cook until wilted. If using frozen spinach, stir until warmed through and any water is evaporated.
- Add cream cheese: Reduce heat to low and stir in cream cheese until melted and smooth.
- Pour in cream: Add heavy cream and stir gently. Let the mixture simmer for 2–3 minutes until thickened.
- Season and serve: Stir in nutmeg, salt, and pepper. Remove from heat and serve warm.
Notes
Make sure to squeeze excess water from frozen spinach to prevent a watery sauce. For extra flavor, add a sprinkle of grated Parmesan or a touch of red pepper flakes. This recipe reheats well and can be made up to 2 days in advance.
