Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces spaghetti or lo mein noodles
  • 1 tablespoon olive oil
  • 1 cup broccoli florets
  • 1/2 cup sliced carrots
  • 1/4 cup soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • 1/4 teaspoon black pepper
  • 2 cloves garlic, minced
  • Green onions, sliced (for garnish)


Instructions

  1. Cook noodles according to package directions.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add chicken and cook until browned.
  4. Add broccoli and carrots; cook for 2-3 minutes.
  5. In a small bowl, whisk together soy sauce, oyster sauce (if using), sesame oil, cornstarch, and pepper.
  6. Add garlic to the skillet and cook for 30 seconds.
  7. Pour sauce over chicken and vegetables. Cook until sauce thickens.
  8. Add cooked noodles to the skillet and toss to combine.
  9. Garnish with green onions.
