A simple and delicious chicken fajita rice casserole. It’s easy to make and perfect for a weeknight meal.

- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 packet (1 ounce) fajita seasoning
- 1 onion, chopped
- 1 bell pepper (any color), chopped
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 cup uncooked rice
- 2 cups chicken broth
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine chicken, fajita seasoning, onion, bell pepper, and diced tomatoes.
- Stir in uncooked rice and chicken broth.
- Pour mixture into a 9×13 inch baking dish.
- Cover with foil and bake for 45 minutes.
- Remove foil and sprinkle with cheddar cheese.
- Bake for another 15 minutes, or until the cheese is melted and bubbly and the rice is cooked.
- Let stand for a few minutes before serving.
Notes
- You can add other vegetables, like corn or black beans.
- For a spicier dish, use a hotter fajita seasoning.
- Serve with your favorite toppings, such as sour cream, salsa, and guacamole.
