Description

A simple and delicious chicken fajita rice casserole. It’s easy to make and perfect for a weeknight meal.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 packet (1 ounce) fajita seasoning
  • 1 onion, chopped
  • 1 bell pepper (any color), chopped
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine chicken, fajita seasoning, onion, bell pepper, and diced tomatoes.
  3. Stir in uncooked rice and chicken broth.
  4. Pour mixture into a 9×13 inch baking dish.
  5. Cover with foil and bake for 45 minutes.
  6. Remove foil and sprinkle with cheddar cheese.
  7. Bake for another 15 minutes, or until the cheese is melted and bubbly and the rice is cooked.
  8. Let stand for a few minutes before serving.

Notes

  • You can add other vegetables, like corn or black beans.
  • For a spicier dish, use a hotter fajita seasoning.
  • Serve with your favorite toppings, such as sour cream, salsa, and guacamole.
