Description
A simple and delicious Crockpot Turkey Taco Casserole.
Ingredients

- 1 pound ground turkey
- 1 packet taco seasoning
- 1 cup water
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 cup cooked rice
- 2 cups shredded cheddar cheese
- Optional toppings: sour cream, salsa, avocado, cilantro
Instructions
- Brown ground turkey in a skillet. Drain any excess grease.
- Add taco seasoning and water. Cook according to package directions.
- Pour turkey mixture into the crockpot.
- Add black beans, corn, diced tomatoes and green chilies, and cooked rice. Stir to combine.
- Cook on low for 2-3 hours or on high for 1-2 hours.
- Stir in 1 cup of cheese.
- Top with remaining cheese. Cook until melted.
- Serve with desired toppings.
Notes
- You can substitute ground beef or chicken for the ground turkey.
- Feel free to add other vegetables, such as bell peppers or onions.
- Adjust the amount of taco seasoning to your taste.
