Description

A simple and delicious Crockpot Turkey Taco Casserole.


Ingredients

Scale
  • 1 pound ground turkey
  • 1 packet taco seasoning
  • 1 cup water
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 cup cooked rice
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, salsa, avocado, cilantro


Instructions

  1. Brown ground turkey in a skillet. Drain any excess grease.
  2. Add taco seasoning and water. Cook according to package directions.
  3. Pour turkey mixture into the crockpot.
  4. Add black beans, corn, diced tomatoes and green chilies, and cooked rice. Stir to combine.
  5. Cook on low for 2-3 hours or on high for 1-2 hours.
  6. Stir in 1 cup of cheese.
  7. Top with remaining cheese. Cook until melted.
  8. Serve with desired toppings.

Notes

  • You can substitute ground beef or chicken for the ground turkey.
  • Feel free to add other vegetables, such as bell peppers or onions.
  • Adjust the amount of taco seasoning to your taste.
