Description

Easy Crockpot Teriyaki Chicken perfect for meal prepping. Make a big batch for your weekly lunches or dinners.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup teriyaki sauce
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/4 cup cornstarch
  • 2 tablespoons cold water
  • Sesame seeds for garnish (optional)
  • Green onions, sliced for garnish (optional)


Instructions

  1. Place chicken breasts in the crockpot.
  2. In a bowl, whisk together teriyaki sauce, soy sauce, brown sugar, sesame oil, garlic, and ginger.
  3. Pour sauce over chicken.
  4. Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
  5. Remove chicken from crockpot and shred with two forks.
  6. In a small bowl, whisk together cornstarch and cold water to make a slurry.
  7. Pour slurry into the crockpot and stir to thicken the sauce. Cook on high for 15-20 minutes.
  8. Return shredded chicken to the crockpot and toss to coat.
  9. Garnish with sesame seeds and green onions, if desired.
  10. Serve over rice, noodles, or with your favorite sides.

Notes

  • For extra flavor, add a pinch of red pepper flakes.
  • You can add vegetables like broccoli or bell peppers to the crockpot during the last hour of cooking.
  • Store leftovers in the refrigerator for up to 4 days.
