Description

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Brown ground beef in a skillet. Drain any grease.
  2. Place beef, onion, carrots, and celery in the crockpot.
  3. Add beef broth, diced tomatoes, basil, oregano, salt, and pepper.
  4. Cook on low for 6-8 hours or on high for 3-4 hours.
  5. Serve hot.

Notes

  • You can add other vegetables, like potatoes or green beans.
  • For a thicker soup, add a cornstarch slurry during the last 30 minutes of cooking.
  • Garnish with fresh parsley before serving.
