A simple and delicious crockpot soup, perfect for a weeknight dinner.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups beef broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Brown ground beef in a skillet. Drain any grease.
- Place beef, onion, carrots, and celery in the crockpot.
- Add beef broth, diced tomatoes, basil, oregano, salt, and pepper.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Serve hot.
Notes
- You can add other vegetables, like potatoes or green beans.
- For a thicker soup, add a cornstarch slurry during the last 30 minutes of cooking.
- Garnish with fresh parsley before serving.
