This crockpot chili features smoky bacon and a rich, sweet flavor profile.

- 1 pound ground beef
- 1 pound bacon, diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can pinto beans, rinsed and drained
- 1/4 cup brown sugar
- 2 tablespoons chili powder
- 1 tablespoon smoked paprika
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, green onions
Instructions
- Cook bacon in a skillet until crispy. Remove bacon, leaving some grease in the pan.
- Brown ground beef in the same skillet. Drain any excess grease.
- Add onion and bell pepper to the skillet and cook until softened.
- Transfer the beef mixture, bacon, garlic, crushed tomatoes, kidney beans, pinto beans, brown sugar, chili powder, smoked paprika, cumin, and cayenne pepper (if using) to the crockpot.
- Season with salt and pepper.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Stir before serving.
- Top with your favorite toppings.
Notes
- For a spicier chili, add more cayenne pepper or a pinch of red pepper flakes.
- You can use turkey or chicken instead of ground beef.
- Feel free to add other vegetables like corn or zucchini.
