Ingredients

  • 1 pound ground beef
  • 1 pound bacon, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1/4 cup brown sugar
  • 2 tablespoons chili powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, green onions


Instructions

  1. Cook bacon in a skillet until crispy. Remove bacon, leaving some grease in the pan.
  2. Brown ground beef in the same skillet. Drain any excess grease.
  3. Add onion and bell pepper to the skillet and cook until softened.
  4. Transfer the beef mixture, bacon, garlic, crushed tomatoes, kidney beans, pinto beans, brown sugar, chili powder, smoked paprika, cumin, and cayenne pepper (if using) to the crockpot.
  5. Season with salt and pepper.
  6. Cook on low for 6-8 hours or on high for 3-4 hours.
  7. Stir before serving.
  8. Top with your favorite toppings.

Notes

  • For a spicier chili, add more cayenne pepper or a pinch of red pepper flakes.
