Description

A flavorful and healthy Mediterranean-style Crockpot Chicken and Chickpea Soup.


Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Place chicken breasts in the crockpot.
  2. Add onion, carrots, celery, garlic, chickpeas, diced tomatoes, chicken broth, oregano, basil, salt, and pepper.
  3. Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
  4. Remove chicken from crockpot and shred with two forks.
  5. Return shredded chicken to the crockpot.
  6. Stir to combine.
  7. Garnish with fresh parsley before serving.

Notes

  • Adjust seasonings to your preference.
  • You can add a squeeze of lemon juice before serving for extra flavor.
