Ingredients

  • 1.5 lbs chicken breasts, cut into 1-inch pieces
  • 1 lb smoked sausage, sliced
  • 1 large onion, chopped
  • 2 bell peppers (any color), chopped
  • 4 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup Cajun seasoning
  • 8 ounces pasta (penne or rotini)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Place chicken, sausage, onion, bell peppers, and garlic in the crockpot.
  2. Pour in crushed tomatoes, chicken broth, and Cajun seasoning.
  3. Season with salt and pepper.
  4. Cook on low for 6-8 hours or on high for 3-4 hours.
  5. In the last 30 minutes of cooking, add the pasta.
  6. Stir in heavy cream.
  7. Cook until pasta is tender.
  8. Garnish with fresh parsley before serving.
