- 1.5 lbs chicken breasts, cut into 1-inch pieces
- 1 lb smoked sausage, sliced
- 1 large onion, chopped
- 2 bell peppers (any color), chopped
- 4 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup Cajun seasoning
- 8 ounces pasta (penne or rotini)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Place chicken, sausage, onion, bell peppers, and garlic in the crockpot.
- Pour in crushed tomatoes, chicken broth, and Cajun seasoning.
- Season with salt and pepper.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- In the last 30 minutes of cooking, add the pasta.
- Stir in heavy cream.
- Cook until pasta is tender.
- Garnish with fresh parsley before serving.
Notes
- Adjust the amount of Cajun seasoning to your preference.
- You can add a pinch of red pepper flakes for extra heat.
- Serve with a side of garlic bread.
