Description

A creamy, flavorful chicken dish made in a slow cooker. This Marry Me Chicken is perfect for a weeknight meal or a special occasion.


Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish


Instructions

  1. Season the chicken with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken on both sides until golden brown, about 3-4 minutes per side.
  3. Transfer chicken to your slow cooker.
  4. Add chopped onion and minced garlic to the skillet. Cook until softened, about 5 minutes.
  5. Add the crushed tomatoes, heavy cream, sun-dried tomatoes, basil, oregano, and red pepper flakes (if using) to the slow cooker. Stir to combine.
  6. Place the seared chicken on top of the sauce mixture in the slow cooker.
  7. Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until chicken is cooked through and tender.
  8. Stir in the Parmesan cheese until melted and combined.
  9. Serve the chicken with the sauce over pasta, rice, or mashed potatoes. Garnish with fresh basil or parsley.

Notes

  • For a keto version, serve over zucchini noodles or cauliflower rice.
  • You can add spinach in the last 30 minutes of cooking for added greens.
