Description
A creamy, flavorful chicken dish made in a slow cooker. This Marry Me Chicken is perfect for a weeknight meal or a special occasion.

- 2 pounds boneless, skinless chicken breasts or thighs
- 1 tablespoon olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1/2 cup heavy cream
- 1/4 cup sun-dried tomatoes, chopped
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil or parsley, for garnish
Instructions
- Season the chicken with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear chicken on both sides until golden brown, about 3-4 minutes per side.
- Transfer chicken to your slow cooker.
- Add chopped onion and minced garlic to the skillet. Cook until softened, about 5 minutes.
- Add the crushed tomatoes, heavy cream, sun-dried tomatoes, basil, oregano, and red pepper flakes (if using) to the slow cooker. Stir to combine.
- Place the seared chicken on top of the sauce mixture in the slow cooker.
- Cover and cook on low for 4-6 hours, or on high for 2-3 hours, until chicken is cooked through and tender.
- Stir in the Parmesan cheese until melted and combined.
- Serve the chicken with the sauce over pasta, rice, or mashed potatoes. Garnish with fresh basil or parsley.
Notes
- For a keto version, serve over zucchini noodles or cauliflower rice.
- You can add spinach in the last 30 minutes of cooking for added greens.
