- 1 pound Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
- 1/4 cup panko breadcrumbs
- 1 clove garlic, minced
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh chives, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
- In a small bowl, mix together the Parmesan cheese, panko breadcrumbs, and minced garlic.
- Add the Parmesan mixture to the Brussels sprouts and toss to coat evenly.
- Spread the Brussels sprouts in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until tender and crispy, flipping halfway through.
- Remove from oven and toss with fresh parsley and chives.
- Serve immediately.
Notes
- For extra crispy sprouts, ensure they are dry before tossing with oil and seasonings.
- You can add a pinch of red pepper flakes for a little heat.
- Feel free to substitute other fresh herbs like dill or thyme.
