Ingredients

  • 4 boneless, skinless chicken breasts
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine spinach, Parmesan cheese, heavy cream, and garlic. Season with salt and pepper.
  3. Cut a pocket into each chicken breast.
  4. Stuff each chicken breast with the spinach mixture.
  5. Drizzle the chicken with olive oil and season with salt and pepper.
  6. Bake for 25-30 minutes, or until chicken is cooked through.
  7. Let it rest for a few minutes before serving.

Notes

  • You can add other herbs and spices to the spinach mixture, like nutmeg or red pepper flakes.
