- 4 boneless, skinless chicken breasts
- 10 ounces frozen spinach, thawed and squeezed dry
- 1/2 cup grated Parmesan cheese
- 1/4 cup heavy cream
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine spinach, Parmesan cheese, heavy cream, and garlic. Season with salt and pepper.
- Cut a pocket into each chicken breast.
- Stuff each chicken breast with the spinach mixture.
- Drizzle the chicken with olive oil and season with salt and pepper.
- Bake for 25-30 minutes, or until chicken is cooked through.
- Let it rest for a few minutes before serving.
Notes
- You can add other herbs and spices to the spinach mixture, like nutmeg or red pepper flakes.
- Serve with a side of roasted vegetables or a fresh salad.
