Description

Simple recipe for creamy spinach chicken thighs.


Ingredients

  • Chicken thighs: 6-8
  • Spinach: 10 oz, fresh or frozen
  • Heavy cream: 1 cup
  • Chicken broth: 1/2 cup
  • Garlic: 2 cloves, minced
  • Onion: 1/2, chopped
  • Olive oil: 1 tbsp
  • Salt and pepper: to taste
  • Optional: Parmesan cheese for topping


Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a pan. Sear chicken until browned.
  3. Remove chicken. Add onion and garlic, cook until softened.
  4. Add spinach and cook until wilted.
  5. Pour in chicken broth and heavy cream.
  6. Return chicken to the pan. Simmer until chicken is cooked through.
  7. Season with salt and pepper.
  8. Top with Parmesan cheese, if desired.

Notes

  • Adjust seasoning to your liking.
  • Serve with rice or pasta.
  • Frozen spinach should be thawed and excess water squeezed out.
