Simple recipe for creamy spinach chicken thighs.
Ingredients
- Chicken thighs: 6-8
- Spinach: 10 oz, fresh or frozen
- Heavy cream: 1 cup
- Chicken broth: 1/2 cup
- Garlic: 2 cloves, minced
- Onion: 1/2, chopped
- Olive oil: 1 tbsp
- Salt and pepper: to taste
- Optional: Parmesan cheese for topping
Instructions
- Season chicken thighs with salt and pepper.
- Heat olive oil in a pan. Sear chicken until browned.
- Remove chicken. Add onion and garlic, cook until softened.
- Add spinach and cook until wilted.
- Pour in chicken broth and heavy cream.
- Return chicken to the pan. Simmer until chicken is cooked through.
- Season with salt and pepper.
- Top with Parmesan cheese, if desired.
Notes
- Adjust seasoning to your liking.
- Serve with rice or pasta.
- Frozen spinach should be thawed and excess water squeezed out.
