Delicious creamy pumpkin cheesecake bars.


Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 6 tablespoons butter, melted
  • 1 (8 ounce) package cream cheese, softened
  • 3/4 cup pumpkin puree
  • 1/2 cup sugar
  • 1 large egg
  • 1/2 teaspoon pumpkin pie spice


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into a 9×13 inch pan.
  3. Bake crust for 8 minutes.
  4. Beat cream cheese and sugar until smooth.
  5. Mix in pumpkin puree, egg, and pumpkin pie spice.
  6. Pour filling over crust.
  7. Bake for 25-30 minutes.
  8. Let cool completely.
  9. Refrigerate for at least 2 hours.
  10. Cut into bars and serve.

Notes

  • For a richer flavor, use full-fat cream cheese.
  • Add a dollop of whipped cream before serving.
