A comforting and quick one-pot meal featuring creamy pastina, tender chicken, and fresh spinach.
Ingredients

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup pastina
- 4 cups chicken broth
- 5 ounces fresh spinach
- 1/2 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Season chicken with salt and pepper.
- Add chicken to the pot and cook until browned, about 5-7 minutes.
- Stir in pastina and chicken broth.
- Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until the pastina is cooked and the liquid has been absorbed.
- Stir in spinach and cook until wilted, about 1-2 minutes.
- Remove from heat and stir in Parmesan cheese.
- Serve immediately.
Notes
- You can substitute the chicken with cooked rotisserie chicken to save time.
- Adjust the amount of spinach to your preference.
- For a richer flavor, use a combination of Parmesan and Pecorino Romano cheese.
