Description

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup pastina
  • 4 cups chicken broth
  • 5 ounces fresh spinach
  • 1/2 cup grated Parmesan cheese


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Season chicken with salt and pepper.
  3. Add chicken to the pot and cook until browned, about 5-7 minutes.
  4. Stir in pastina and chicken broth.
  5. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until the pastina is cooked and the liquid has been absorbed.
  6. Stir in spinach and cook until wilted, about 1-2 minutes.
  7. Remove from heat and stir in Parmesan cheese.
  8. Serve immediately.
