Ingredients

  • 8 oz cremini mushrooms, sliced
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley


Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season chicken with salt and pepper.
  3. Cook chicken until browned.
  4. Add mushrooms and shallot; cook until softened.
  5. Stir in garlic. Cook for 30 seconds.
  6. Pour in chicken broth and bring to a simmer.
  7. Stir in heavy cream and Parmesan cheese.
  8. Simmer until sauce thickens.
  9. Stir in parsley.
  10. Serve immediately.
