Description

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces, salt, and pepper. Cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and cook for about 30 seconds until fragrant.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in heavy cream and Parmesan cheese. Cook, stirring, until the sauce thickens slightly.
- Return the cooked chicken to the skillet. Add the fresh spinach and stir until wilted.
- Stir in lemon juice and lemon zest.
- Serve immediately.
Notes
- For a spicier dish, add a pinch of red pepper flakes with the garlic.
- Serve with pasta, rice, or crusty bread.
