Description

A quick and easy creamy lemon spinach chicken skillet dish perfect for a weeknight meal. Tender chicken breast is cooked in a rich, creamy sauce with fresh spinach and bright lemon.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces, salt, and pepper. Cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
  3. Add minced garlic to the skillet and cook for about 30 seconds until fragrant.
  4. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  5. Stir in heavy cream and Parmesan cheese. Cook, stirring, until the sauce thickens slightly.
  6. Return the cooked chicken to the skillet. Add the fresh spinach and stir until wilted.
  7. Stir in lemon juice and lemon zest.
  8. Serve immediately.

Notes

  • For a spicier dish, add a pinch of red pepper flakes with the garlic.
  • Serve with pasta, rice, or crusty bread.
